Finding filling snacks has always been a challenge – I’m one of those people who always seems to be hungry, quite possibly because I’m incapable of sitting still. This hummus is the ideal snack for when you don’t have much time but wan’t something healthy and filling. It’s heaps better than store bought hummus and cheaper too.
I always keep a tin of chickpeas on standby for this very recipe. With a hand bender and 5 ingredients you’ll have a great picnic or at home snack ready to go in under 5 minutes.
Ingredients
1 tin chickpeas
5 tbsp plive oil
1 tbsp lemon juice
1tsp salt
1 garlic clove
Method
- Grab a bowl, jar or other vessel that you can blend in – it needs to be big enough to fit all of the ingredients in with some extra space
If you have it, a small food processor works well too - Drain the chickpeas and put them into into your bowl
- Peel the garlic and roughly chop it – the chopping is optional but I always seem to do it
- Add the garlic to the chickpeas
- Put the rest of the ingredients in
- Blend until smooth to your liking
Note: If using a hand blender like me you may need to scoop the mixture out of the blender head once or twice using a teaspoon as the chickpeas will compact together when you first press down - Serve or put into a container to take on your adventures
