We love pandan in our household, particularly pandan cake. But sometimes there isn’t enough time to make them and you just need a quick recipe. This is that. Soft cookies that are great with a cup of coffee. Given their colour (from the essence) they’re Paddy’s day!
Ingredients
200g plain flour
200g sugar
200g margarine/ butter
1 egg
1/2tsp baking powder
1tsp vanilla extract
1.5 – 2 tsp pandan essence (depending how pandan-y you like it)
- Turn the oven on at 170C
- Line a baking sheet or two*
- Mix the ingredients together until combined
- Roll into balls in the palm of your hand and place on the baking sheet with space in between. Lightly press the dough balls down so they are slightly flattened
- Place in the over for 12-15 minutes
They want to be slightly risen and still soft when you get them out. They’ll harden as they cool
*If there’s space in the oven I’ll do two at once however if not, I’ll do them in two lots. It’s okay for the cookie dough to sit while the first batch cooks.
