This is a super simple recipe using what you will most likely already have in the house – it came about when we were in need of an afternoon snack but didn’t have much of interest in the fridge. It’s now become a firm favourite in our household. The softness of the eggy bread with the crunchy of the onions and melty cheese is a winning combination. The Worcestershire sauce is optional but I would highly recommend it!
Ingredients
1 slice bread
1/3 – 1/2 onion
3-4 slices cheddar or similar cheese
Worcestershire sauce
Method
- Dice your onion – this can be as fine or rough as as you like. Chunkier dicing will give more crunch when you come to eat it
- Slice your cheese to around 0.5cm. This should be about the same thickness for cheese on toast
- Whisk the egg in a deep plate and season with salt & pepper – you want a plate big enough that the bread can lie flat
- Lie the slice of bread in the egg mixture and move it around. Flip it over and make sure the whole slice is covered in egg. You may need to give it a rub but all of the egg should be absorbed
- Turn the grill to 160 degrees C (ours is very fast to heat up so I usually put it on when I take the bread out of the pan)
- Heat your frying pan on a medium heat with a splash of oil or butter
- Put the eggy bread in the frying pan* – it’ll want around 2 minutes on each side and should be golden brown
*If you have a cast iron skillet use this, it’ll save on washing up a baking tray or grill pan - Place the eggy bread onto a baking sheet or grill pan, and cover with the diced onion. Then, add the cheese on top
- Place under the grill for around 3 minutes until the cheese is bubbling
- Drizzle with Worcestershire sauce and serve
Note: If you’re making multiple slices, I’d recommend doing one egg and piece of bread at a time otherwise you may run out of the eggy mixture for the later pieces of bread.
FAQs
Can I use any kind of bread?
Yes! I usually use a seeded wholemeal loaf because that’s what we normally have in the house but any bread will work.
Can I add milk to the egg mix?
A lot of French Toast recipes use milk so you could definitely add some here. Just make sure the bread doesn’t get too wet.
How long should the bread soak in the egg for?
I usually only leave it for a minute or so. This is a ready-quickly kind of dish but you definitely could let it soak for longer.
