Simple Lamb Stew
This is a very simple, but delicious lamb stew that really champions fresh ingredients. I made it using local ingredients while travelling in NZ. I’ve kept the ingredient list down so you can make it with very little fuss.
Ingredients
Serves 2
For the fish
- 2 lamb shoulder steaks
- 1.5 onions (1 or 2 is fine – I just had an extra half going spare from another recipe)
- 3 cloves of garlic
- 1 tin of chopped tomatoes
- 1 cup chicken stock
- Mixed herbs – dried or fresh (I used a shop bough mix of oregano, basil, rosemary and thyme as that’s the only seasoning we had on that day)
- 4 potatoes
- Salt/ pepper
Instructions
- Chop and saute the onion
- Mince the garlic and add to the onions
- Seal the meat on each side
- Add the stock and tinned tomatoes
- Season with salt, pepper and herbs
- Cook for 2 hours on the hob on a medium heat
- If you can, leave to rest overnight to let the flavour develop
