Simple Lamb Stew

#local#airbnb#1pan

This is a very simple, but delicious lamb stew that really champions fresh ingredients. I made it using local ingredients while travelling in NZ. I’ve kept the ingredient list down so you can make it with very little fuss.

Ingredients

Serves 2

For the fish

  • 2 lamb shoulder steaks
  • 1.5 onions (1 or 2 is fine – I just had an extra half going spare from another recipe)
  • 3 cloves of garlic
  • 1 tin of chopped tomatoes
  • 1 cup chicken stock
  • Mixed herbs – dried or fresh  (I used a shop bough mix of oregano, basil, rosemary and thyme as that’s the only seasoning we had on that day)
  • 4 potatoes
  • Salt/ pepper

Instructions

  1. Chop and saute the onion
  2. Mince the garlic and add to the onions
  3. Seal the meat on each side
  4. Add the stock and tinned tomatoes
  5. Season with salt, pepper and herbs
  6. Cook for 2 hours on the hob on a medium heat
  7. If you can, leave to rest overnight to let the flavour develop
